When all else fails for us at mealtime, eggs. Pre-pandemic we’d have weeknights that totally got away from/overwhelmed us and so we’d have eggs. And now, well now there are all different stressors and days blend together but we still need to get something nourishing on the table. So again, eggs. Here’s a list to give you 10 ideas when you’re in a pinch. Glad to be back in action with my recipe partner @katieebertsillustration and her incredible watercolor and ink illustrations. It’s super hot today so I thought I’d share one of our favorite popsicle recipes. Makes plenty for a smoothie plus small pops. We eat this basically once a week, but if it were up to my husband we literally wouldn’t eat anything else. Egg roll in a bowl recipe from @ilanamuhlsteinrd and I made a few tweaks like adding shredded 🥕and used an entire head of cabbage. I didn’t have sesame oil on hand the first few batches and dropping it wasn’t a problem. Use a giant pan! Tastes great using ground beef or chicken, tho I prefer beef. Also, the recipe is linked in the Every. Single. Day. menu calendar (link in bio) on Day 8!
