Roasted Carrots with Honey & Tahini Drizzle



4 large Carrots

1-2 TBPS Olive Oil

1/4 tsp Salt

1/4 tsp Pepper

2 TBSP Honey

2 TBSP Tahini (at room temperature)


PREHEAT oven to 450 degrees

PEEL carrots and cut off top and bottom

CUT carrots into 1-2 inch chunks and place on a rimmed baking sheet

DRIZZLE carrots with olive oil. SPRINKLE with salt and pepper.  TOSS together with your hands.

ROAST in oven for 15 minutes or until just tender when pierced with a fork

REMOVE tray from oven with mitts and transfer carrots to a big plate.

DRIZZLE with honey and tahini.
